Some everyday Greek foods have no protected name at all. Mountain tea is one: about 17 Sideritis species grow in Greek mountains, and there is no PDO or PGI to point to. Without a register, we rely on paperwork. For mountain tea that means an organic certificate and proof of cultivation, because the Olympus species, Sideritis scardica, is listed by the IUCN as Near Threatened, and wild-picked stems are the product to refuse. Each record in this section says plainly that there is no geographical indication, and names the grower once one is signed. The method is described in The Record.
