The address
North Aegean Βόρειο Αιγαίο
The large eastern islands, including Lesvos, Samos and Chios. PINAX comes for the mastic villages, the Mastichochoria, in the south of Chios.
About this object
What it is
Fifty grams of medium mastiha tears: the dried resin of the mastic tree, Pistacia lentiscus var. Chia. Masticha Chiou has been an EU Protected Designation of Origin since 1997, and only resin from southern Chios may carry the name. Separately, the know-how of cultivating mastic on Chios was inscribed on the UNESCO Representative List of the Intangible Cultural Heritage in 2014.
Where and how it is made
The trees grow in the Mastichochoria, the mastic villages of southern Chios, in the North Aegean (GR-K). Growers scrape the bark and let the resin tears dry before collection. The Chios Mastiha Growers Association, a cooperative, holds exclusive handling rights.
How to use it
Chew a tear or two as they are, or grind a small amount with sugar before adding it to baking. The pack is light, dry and shelf-stable.
What we have not verified yet
The Growers Association’s own subsidiary, Mediterra, runs the mastihashop retail chain, which sells the same size for €12.00. That makes the cooperative a rival retailer, so PINAX waits for a licensed PDO packer. Maker: [partner to be sourced]. Until that contract is signed, this item is shown as being verified and cannot be bought. The pack will never be opened or repacked.
