The place

The region around Thessaloniki, reaching south to the northern slopes of Mount Olympus. PINAX looks here for mountain tea.

About 17 species of Sideritis grow in Greek mountains, and Sideritis scardica is the one associated with Olympus. Others belong to other ranges: Sideritis raeseri to Parnassos, Sideritis syriaca to Crete. The European Medicines Agency has published a herbal assessment covering several of them. Sideritis scardica is listed by the IUCN as Near Threatened, so we sell only cultivated, certified-organic stems and never wild-picked plants.

Our 40 g pack holds whole dried stems, leaves and flowers, packed in a rigid sleeve so they do not break into dust. To brew, break a few stems into a pot, pour over boiling water and steep for five to ten minutes.

Mountain tea has no geographical indication. Its record says so, and the grower may sit on the Central Macedonia side of Olympus or in Thessaly. Before we sign one, we will ask for the organic certificate and proof of cultivation, and an accountant still has to confirm that herbal tea takes the 13% food VAT rate. The item stays in being verified until a certified grower is signed.
