The place
The region of Athens and the Saronic Gulf islands. PINAX skips the monuments and goes to the orchards of Aegina.
Fystiki Aiginas has been an EU Protected Designation of Origin since 1996. The trees grow in volcanic soil around Aegina, Kypseli, Messagros, Vathy and Perdika. The island produces about 600 to 800 tonnes a year, certified through AGROCERT. Shells split naturally, and the kernel is green with a slightly salty taste.
Our pack is 227 g of in-shell pistachios roasted with sea salt. A cited retailer sells the same size at EUR 13.50 before VAT, and our price is set against that, not against a supplier quote. The pack carries nut allergen labelling, travels light and shelf-stable, and US orders need FDA Prior Notice. Shell and eat them as they are, or chop the kernels over yoghurt, rice or baked fish.
Much of the pistachio sold on the island is not from Aegina, which is why we list only PDO-labelled packs. The test is the name: insist on Fystiki Aiginas on the pack, because loose island pistachio without it proves nothing. The register entry is linked from the record. The item is being verified until a PDO packer is signed.

Saffron pilaf with Vostizza currants
Long-grain rice coloured with Krokos Kozanis saffron and studded with Vostizza currants. Two PDO foods from two regions, one pan, about an hour.
Uses: Fystiki Aiginas PDO pistachios, roasted with sea salt, 227 g
