About this object

What it is

One gram of saffron threads, the dried stigmas of the autumn crocus, registered in the EU as Krokos Kozanis, a Protected Designation of Origin. It takes about 150,000 flowers to make one kilogram.

Where and how it is made

The crocus is grown around Kozani in Western Macedonia (GR-C), at about 40.30 N, 21.79 E. Since 1971 a single producers’ cooperative of about 1,000 members has held exclusive rights to harvest, sort, pack and sell the crop. Every genuine pack therefore comes through that cooperative, and this is the pack we sell, unopened.

How to use it

Steep a pinch of threads in a few spoonfuls of warm water before adding it to rice, stews or baking. Our Kitchen section has a saffron pilaf with Vostizza currants, and both the saffron and the currants are on our shelf. To give saffron as a present, the same cooperative pack comes in a 4 g gift size.

What we have not verified yet

The cooperative sells directly, so this is one of our first-wave items, but our supply contract is still to be signed. Greek retail for Krokos Kozanis runs at about €6.00 to 10 per gram (a secondary source). Saffron is among the most adulterated spices, so the warm-water test is printed on the record. US orders need FDA Prior Notice before dispatch.
