About this object
What it is
A σκεπαστάρια (skepastaria, lidded pot), the clay vessel in which Sifnos cooks revithada, a chickpea stew left in the oven overnight. Sifnos pottery was inscribed in Greece’s National Inventory of Intangible Cultural Heritage in January 2022. That is a national list kept under the UNESCO 2003 Convention, not the UNESCO world list, and we say so plainly.
Where and how it is made
Sifnos, Cyclades, South Aegean (GR-L). The island’s potters use heat-proof local clay and wood-fired kilns, and the island’s official site counts 15 pottery workshops. It is a cooking object with a food story, not decoration.
How to use it
Soak chickpeas overnight, layer them in the pot with onion, bay and olive oil, cover with water, seal the lid and bake slowly for several hours. Our Kitchen has the full revithada recipe.
