About this object
What it is
A 500 ml tin of extra virgin olive oil registered as Kolymvari Chanion Kritis, a Protected Designation of Origin. The label shows the exact registered name, the harvest year and the mill.
Where and how it is made
Kolymvari, in the Chania regional unit of Crete (GR-M). The oil is mostly from the Koroneiki variety. Crete produces about a third of all Greek olive oil, and the island has several separate PDO oil names; this record names one of them exactly.
How to use it
Raw, over fava, beans or bread, where its flavour is easiest to taste. A tin keeps out light, which is why we chose it over glass. Once opened, keep it closed and away from the stove. New-season oil arrives as our November harvest drop.
What we have not verified yet
No mill or cooperative is signed. Maker: [partner to be sourced]. We cannot yet name the harvest year of the first tins. The tin goes by courier only, and US orders need FDA Prior Notice. This oil is also half of our Chania box (GR-M), next to a Chania knife.
